The creation of the Aunt Jemima trademark from an 1889 vaudeville performance of a play called "The Emigrant" helped codify a pervasive connection between African American women and food. In Black Hunger, Doris Witt demonstrates how this connection has operated as a central structuring dynamic of twentieth-century U.S. psychic, cultural, sociopolitical, and economic life. Taking as her focus the tumultuous era of the late 1960s and early 1970s, when soul food emerged as a pivotal emblem of white radical chic and black bourgeois authenticity, Witt explores how this interracial celebration of previously stigmatized foods such as chitterlings and watermelon was linked to the contemporaneous vilification of black women as slave mothers. By positioning African American women at the nexus of debates over domestic servants, black culinary history, and white female body politics, Black Hunger demonstrates why the ongoing narrative of white fascination with blackness demands increased attention to the internal dynamics of sexuality, gender, class, and religion in African American culture. Witt draws on recent work in social history and cultural studies to argue for food as an interpretive paradigm which can challenge the privileging of music in scholarship on African American culture, destabilize constrictive disciplinary boundaries in the academy, and enhance our understanding of how individual and collective identities are established.

However, instead of seeing this discipline as dominant or oppressive it argues that a rationalisation of pleasure plays a positive role in our lives, allowing us to better understand who we are.The book begins by exploring the way that concerns about food, the body and pleasure were prefigured in antiquity and then how these concerns were recast in early Christianity as problems of 'natural' appetite which had to be curbed. The following chapters discuss how scientific knowledge about food was constructed out of philosophical and religious concerns about indulgence and excess in 18th and 19th Century Europe. What does the growing commodification and globalization of food mean for our capacity to store the past in our meals - in the smell of olive oil or the taste of a fresh-cut fig?This book offers a theoretical account of the interrelationship of culture, food and memory. Sutton challenges and expands anthropology's current focus on issues of embodiment, memory and material culture, especially in relation to transnational migration and the flow of culture across borders and boundaries. The Greek island of Kalymnos in the eastern Aegean, where Islanders claim to remember meals long past -- both humble and spectacular - provides the main setting for these issues, as well as comparative materials drawn from England and the United States. Despite the growing interest in anthropological accounts of food and in the cultural construction of memory, the intersection of food with memory has not been accorded sustained examination. Cultural practices of feasting and fasting, global flows of food as both gifts and commodities, the rise of processed food and the relationship of orally transmitted recipes to the vast market in speciality cookbooks tie traditional anthropological mainstays such as ritual, exchange and death to more current concerns with structure and history, cognition and the 'anthropology of the senses'. Arguing for the crucial role of a simultaneous consideration of food and memory, this book significantly advances our understanding of cultural processes and reformulates current theoretical preoccupations.
