IT takes a special kind of person to be busy planning Valentine's Day when the rest of the world is filling Christmas stockings.
Sarah Milen can be setting crackers straight on tables one day and planning favours for Mothers Day or Easter on the same afternoon.
The 22-year-old works for Brookes, a division of caterers Gardner Merchant, in the Adam Stables at lovely Hopetoun House, outside Edinburgh.
It's a fairly new venue for the stately home and, while it is a busy restaurant in the summer - when Hopetoun is open to the public, Sarah's job is to build it up as a year-round attraction.
That means preparing Christmas party nights, corporate entertainment and staff nights out which people can really enjoy and remember.
"It is really memories that I am selling," Sarah says.
"There is nothing tangible that people will take away, except the memories of a good time which can last forever."
But that means getting the details right.
Sarah is usually out and about, talking to people about the unusual venue of the Adam Stables.
But she says she has taken Christmas on as a special project this year.
"I need to be familiar with every little detail of how things are going to work in order to talk it over with clients."
That might mean arranging for an after- dinner speaker, or just making sure there is a coach on hand to ferry revellers safely back into the centre of Edinburgh.
But the memories have to be just right.
"It's the problems that people will remember," Sarah says.
"So it is important to make sure the details are not overlooked. …
