It has been generally accepted that Streptococcus mutans is a principal microbial pathogen in human dental caries. Hamada observed a difference in the pattern of caries lesions in rats following infection by serotype c, e,f, and d organisms.
In addition, serotype c strain of S. mutans was found to develop strong dental caries in mice, rats, and hamsters.The objectives of this study are the increase of productivity of yolk immunoglobulin (IgY) by feeding special diets to hens, and the development of the application of eggs as functional food and medical resources by separating and purifying IgY from egg yolks which anti-S. mutans IgY is fortified by vaccinating S.mutans.
As for the effect of the special diet feeding on the laying performance, the decrease in laying rate, which is generally accompanied with vaccination, was not observed in the cinnamon added group and charcoal added group.
Analysis of specific IgY contents against S. mutans, obtained from vaccinated hens, revealed that charcoal treated group had much higher contents than the other, especially more than 2.5 times higher than the vaccinated control diet group.
The rate of specific IgY to S. mutans cells in total IgY was 61 percent,that is, about 100 milligrams of anti- S. mutans IgY was yielded from 15g of egg yolk. …
