Food People: Top of the Pots

WITH BLACK PUDDING AND CRANBERRIES
This is VERY different from traditional winter hotpots! Pork replaces lamb, squash replaces turnips and black pudding gives a peppery bite to contrast with the sweetness of cranberries.
Preparation time: 20 minutes.
Cooking time: About 1 hour 45 minutes.
4 pork chops, all fat and skin removed
1 large carrot, peeled and chopped
2 large cloves of garlic, crushed
115g (412oz) black pudding
115g fresh cranberries (or 75g dried)
300g (11oz) diced butternut squash, no skin or seeds
Zest of 1 lemon
2 small onions, peeled and chopped
Salt and freshly-ground black pepper
2 tbsp vegetable oil
2 tbsp plain flour
12 pork or chicken stock cube (strong), mixed with about 1 pint boiling water
4 large baking potatoes, peeled and sliced - but
not too thinly
