Celebrity Square Meals ; Adrian Chiles' Pan-Fried Lime and Coriander Tuna


I enjoy cooking and eating at home. Sitting down to eat with my wife and our two little girls feels pretty fundamental to being a family - especially now they're old enough (the kids that is) to get at least as much food inside them as they spread all over the floor. With Fathers'Day coming up, the male cancer charity Everyman asked me, among other dads, to come up with my favourite dish, and the Ha! Ha! Bar & Canteen has created its "best-ever"Father's Day menu accordingly. The menu's available throughout June, and 10p per meal goes to Everyman. Here's my "dad's dish": pan-fried lime and coriander tuna steak on a heap of Thai noodles.

Serves 4

4 tuna steaks

Juice of 4 limes, and some zest

40g chopped fresh coriander

40ml olive oil

40g each mangetout and carrot

80g each red onion, red pepper and pak choi

40g spring onion

A few leaves of fresh basil and mint

240g cooked noodles for the dressing

40ml soy sauce

40g maple syrup

20ml nampla (Thai fish sauce)

30ml sesame oil

A pinch of finely chopped red chillies

Mix the lime juice, chopped coriander and olive oil.
