FOR SPEEDY HOLIDAY GIFTS, dress up spreads. Start with purchased cranberry sauce or fruit preserves, jams, or jellies. To convert the sauce to an old-fashioned curd to eat on muffins or in tarts, cook it with eggs, sugar, butter, and lime. Customize preserves by adding complementary ingredients such as chocolate or liqueurs.

Cranberry-Lime Curd

1 can (16 oz.) whole cranberry sauce 4 large eggs 2 teaspoons grated lime peel (green part only) 1/2 cup lime juice 1/2 cup sugar 1/2 cup (1/4 lb.) butter or margarine, in chunks

In a blender or food processor, whirl to smoothly mix the cranberry sauce, eggs, lime peel, lime juice, sugar, and butter.

Pour mixture into a 10- to 12-inch frying pan. Stir often on low heat until mixture begins to thicken, then stir until curd coats the back of a metal spoon in a smooth, velvety layer, about 20 minutes total. Pour into small, clean decorative jars and let cool. Cover airtight and chill until cold, at least 2 hours or up to 3 weeks. Makes about 3 cups.
