Few ingredients, fresh flavors add up to quick meals

LESS IS MORE IN THESE simple pasta main-dish combinations. They require just a few key ingredients and take little time to cook, both pluses on busy weeknights. However, the sophisticated Italian spareness of these dishes makes them fine enough to share with guests.

Linguine with Escarole

2 tablespoons olive oil

1/2 pound mushrooms (1 kind or a combination of common, porcini, shiitake, portabella, chanterelle), rinsed well and sliced

1 clove garlic, pressed or minced

1/4 teaspoon crushed dried hot red chilies

3/4 cup regular-strength chicken broth

1/2 pound dried linguine

3/4 pound escarole, rinsed and cut in 1/4-inch shreds

Grated parmesan cheese

Salt

In a 10- to 12-inch frying pan, combine oil, mushrooms, and garlic. Stir often over high heat until mushrooms lightly brown, about 8 minutes. Add chilies and broth and bring to a boil. Set aside, but keep warm.

Meanwhile, in a 5- to 6-quart pan, bring about 3 quarts water to a boil over high heat. Add linguine and cook until barely tender to bite, 7 to 9 minutes.

When pasta is done, stir escarole into boiling water. Drain pasta and escarole well and pour into a large bowl. Add mushroom mixture and mix. …
