The caribbean sizzle of these tuna steaks, grilled rare, is complemented by the fresh, uncooked mango chutney served with them. Both fish and chutney are boldly flavored by a blend of citrus, chili, mint, and ginger that plays up the contrasts of sweet, sour, hot, cool, and sharp.

Tuna with Mint-Mango Chutney

1/4 cup chopped fresh mint leaves

1/4 cup orange juice

2 tablespoons lime juice

1 tablespoon minced fresh ginger

1/8 to 1/4 teaspoon minced fresh habanero chili or 1 to 2 teaspoons minced fresh serrano chili

4 tuna (ahi) steaks, about 1 inch thick (4 to 6 oz. each)

1 large (about 1 lb.) firm-ripe mango

Fresh mint sprigs

Salt and pepper

Mix chopped mint, orange juice, lime juice, and minced ginger with chili to taste.

Rinse fish and pat dry. In a bowl, turn fish in 1/3 of the mint mixture, coating well. Let stand at least 15 minutes, or cover and chill up to 2 hours, turning fish over several times. …
