In time of stress, I used to eat terribly--chips and sodas for lunch, or sometimes nothing at all. By day's end, I was often exhausted. So last January, I made a resolution to eat more vegetables, fruits, and whole grains, which is pretty easy to do in the West. After all, our fresh produce is second to none. Spinach became my daily staple, and I discovered the magic of roasting just about any vegetable.

The effect of this change on my mood and energy level has been amazing. The "feel good" benefits of eating healthy don't get as much press as weight loss or medical news, but as we face challenging times in 2009, the power of feeling good from the inside out has never been more important.
