When bartender Dave Kelly opened the Bleubird restaurant with his chef-wife, Sarah Kornfield, they sought out locally grown berries, fruit, and herbs for their bubbles. The result is zingy, refreshing combos like ginger-cherry and blackberry-sage (recipe, far right).

Pithy Little Wine Co. winery also makes its own old-fashioned small-batch soda in flavors like cream soda, black cherry, and root beer--all using real cane sugar. If you can't make it to wine country, you can join their soda club for quarterly shipments of a dozen bottles. $36/shipment;

Restaurant Manresa infuses cane syrup with seasonal ingredients like nasturtium, red plum, and rhubarb, then adds house-charged bubbles. The caraway flavor ("It's frightening how much it tastes like a cola," says drinks manager Jeff Bareilles) stays on the menu year-round manresa restaurant. …
