Middle Eastern cuisine is well known for its range of delicious meze. Try the following recipes--a traditional favourite, ful medames, and a selection of crunchy salads

 
FUL MEDAMES (Serves 4-6) 
 
3 teaspoons cumin seeds 
8 tablespoons olive oil 
5 garlic cloves, crushed 
350g/12oz dried fava or broad 
beans, soaked overnight 
juice of 2 large lemons 
large handful of flat-leaf parsley, 
chopped; more to garnish 
salt and pepper 
paprika, to garnish 
2 lemons cut into wedges, to serve 
 
Rocket and Carrot Salad 
2 handfuls of rocket 
3 carrots, grated 
lemon juice to taste 
salt and pepper 
 
Tomato and Cucumber Salad 
4 large ripe tomatoes, diced 
1 large cucumber, diced 
1 red onion, cut into thin slices 
4 sprigs of mint, chopped 
lemon juice to taste 
 
Beetroot Salad 
3 cooked beetroots (with no added 
vinegar), diced 
1 bunch of radishes, diced 
2 red peppers, cut into cubes 
handful of parsley, chopped 
2 tablespoons olive oil 
 
METHOD 
 
Dry-roast the cumin seeds in a small, heavy pan until they are 
aromatic, then grind them to a powder. …
