If you have a yummy product that's a holiday hit, how do you make the most of the other 11 months? With these tips from a trio of experts: Ron Tanner, vice president of communications for the National Association for the Specialty Food Trade; Stephen Hall, author of From Kitchen to Market: Selling Your Gourmet Food Specialty, and Marsha Firestone, president of the Women Presidents' Organization.

EXPAND YOUR MARKET. If you're a baker, put your label on a coffee blend you like, suggests Tanner. Or develop a dessert topping for your cakes. Think about what would go well with your product-and sell it, either in a gift basket or on your website.

TRY CO-PACKING. Instead of investing in a lot of baking equipment that will sit idle in July, work with a co-packer-a small bakery or a larger factory that'll let you produce your product in its off-hours.

EDUCATE YOUR BANKER. In the off-season, take the time to sit down and explain your business. …
