Stock Up

When you're looking to create a base for slowcooked soups, here's a simple but rich stock to make yourself:

1 Season 3 pounds chicken with salt and pepper and brown in olive oil in a large stockpot. Remove chicken.

2 Put 1 quartered onion, 4 sliced carrots, 2 sliced celery stalks and 3 garlic cloves in the pot and sauté over mediumhigh heat until lightly golden. Add chicken, a handful of chopped parsley, 1 dried bay leaf and 6 cups cold water; bring to a boil. simmer for one hour.
