Put out wreppers and fillings for a party of fast, fun diy summer rolls

1 Crunchy cucumber summer rolls

MAKES 6

Considerthis the salad course. Or, if you'd like a heartier roll, add sliced cooked pork tenderloin.

Leaves and tender stems of 1Ii bunch fresh mint

2 medium carrots, cut into julienne

2 Persian cucumbers or a 10-in. length of English cucumber, cut into julienne

Leaves and tender stems of 1 small bunch watercress

6 rice paper wrappers (8 in. diameter)

2 Turkey, bacon, and avocado summer rolls

MAKES 6

Like a turkey club, only lighter and fresher.

1 red or green jalape ño, seeded and very thinly sliced

½ bunch Thai basil or regular basil

¼ sweet onion, such as Maui, very thinly sliced

1 large ripe avocado, thinly sliced

4 oz. jicama (from 1 small), peeled and cut into julienne

6 slices cooked bacon

6 slices turkey (about 7 oz.) from a whole cooked turkey breast

6 romaine lettuce leaves (6 to 7 in.)

6 rice paper wrappers (8 in. diameter)

3 Tofu, shiitake, and spinach summer rolls

No time for frying? Substitute store-bought smoked tofu (find at Chinese and Vietnamese markets).

Fried sesame-soy tofu CutalO-oz. block of tofu into V4-in.-thick slices, then gently press dry between doubled paper towels. Whisk 2 tbsp. grapeseed oil, 2 minced garlic cloves, and 1 tsp. each sesame oil and soy sauce in a shallow bowl. Dip tofu slices to coat both sides.
