STAR BARS

I just finished making the Super Yay Granóla Bars [Share: Reader Recipe, April/May, p. 10] and had to let you know how much I loved them. I substituted cranberries for raisins, and chia seeds for flax. I can't wait to try new variations and save money!

WEEKEND CHEF

I was thrilled to see an article in the March 2013 issue devoted to cooking meals the way I've cooked them for over 25 years [Cook Up a Storm, p. 54]. I began [make-ahead meals] as an experiment to give me more time to exercise after work, rather than get caught up in the whole "dinner routine." Now, it is my way of life. It is so ubera ting to come home, exercise, shower, and in just a few minutes, have dinner ready. In fact, my husband and I often eat different dishes, as we would in a restaurant. I make several freezerfriendly entrées and side dishes to last us two weeks. From start to finish it takes me about three and a half hours. No more stress over what to make, and no more dirty kitchen every night!

MOM APPROVAL

Thank you so much for including the Vegful Vietnamese Sandwich [Share: Reader Recipe, January/February, p. 12]. This sandwich is so tasty and easy to make. It's my husband's new favorite sandwich! I also want to say thank you for the recipes from the 2012 Reader Recipe Contest, especially the Garlicky Cheezy Kale & Crispy Chick'n Salad ["Get Lucky!" September 2012, p. 69]. Again, so tasty, so easy! These two recipes are now in a rotation in my household. In my opinion, this is what KT needs- more recipes with short ingredients lists and only a few things to chop. As a mom of two small children, sometimes I hnd my afternoon is spent being my own prep cook. I love when I hnd great recipes that are truly 30 minutes or less, including prep. Keep up the great work, and keep the easy ones coming!
