This issue is a love letter to the chefs who've dedicated their days to making great vegetarian food more accessible to all, be it through inventive restaurant menus, inspiring cookbooks, enlightening workshops, or all of the above.

We started working on the idea last summer, when I ventured to California's Central Coast for a cooking workshop with chef Annie Somerville of San Francisco's celebrated Greens restaurant. I leapt at this opportunity to spend a few days with Somerville at Tassajara, the secluded monastery where she once lived and worked as a student of Zen Buddhism, and where she first honed her skills as a vegetarian cook. Following her nose for good cooking in an entirely different direction, VTs food editor, Mary Margaret Chappell, embarked on a self-guided tour of some of the best vegetarian eateries in the United Kingdom. …
