A restaurateur once said the best thing that could happen to his business would be if another restaurant opened across the street. Two restaurants, he explained, brought twice as many customers in front of his store. And he was confident he had the quality, value, and service to keep most of them coming back through his door.

Such is the attitude of most of our Independent Superstars. And many are keeping customers coming back. They explained why they're competing successfully.
