While Dungeness crab may seem like a splurge for a weeknight, when you add it to this family favorite a little goes a long way.

12 oz. elbow pasta or medium-size shell pasta

V2 cup each panko

(Japanese-style bread crumbs) and freshly shredded parmesan cheese (preferably using a Microplane, which makes the cheese fluffier)

2 tsp. extra-virgin olive oil

2 tsp. fresh or 1 tsp. dried thyme leaves

2 tbsp. each salted butter and flour

¼ tsp. each kosher salt and pepper

1/8 tsp. cayenne

3½ cups whole milk, warmed

1 cup grated sharp white cheddar

12 oz. shelled, flaked Dungeness crab

1 green onion, sliced V« in. thick
