It flaunts the colors of Italy's flag-red, white, and green-with three kinds of leaves, each of which has a slightly bitter edge. Italians like to play this edge against creamy pastas and juicy steaks. A number of other countries-including Mexico, Ireland, India, and Madagascar-fly these colors too; the salad could be served with equal patriotic zeal in 10 nations.

i. Cugini Italian Salad

PREP TIME: About 10 minutes, plus at least 15 minutes to chill leaves

NOTES: Use a vegetable peeler to shave the cheese into very thin slices.

MAKES: 6 servings

4 cups arugula (4 to 6 oz.)

1 head radicchio (about 1/2 lb.)

1 head Belgian endive (about 1/4 lb.)

3 tablespoons balsamic vinegar

3 tablespoons extra-virgin olive oil

1/4 teaspoon minced garlic

2 ounces parmesan cheese

Fresh-ground pepper
