Stir-fry some tofu in a tangy sauce for a crunchy, nutty dish

Tofu fans know that this great vegetarian food offers more than most single ingredients: It comes in a range of textures that work in almost any kind of cooking. Go for the extra-firm kind called nigari tofu when you want a hearty dish. The moisture has been pressed out of it, so it stands up to grilling and sautéing. Stir-fry nigari tofu with a mix of salty, sweet, and sour seasonings, add pine nuts for some crunch, and you get a lively filling for a wrap.

Tofu-Pine Nut Lettuce Wraps

These protein-rich wraps make a fun party appetizer or a light meal.

PREP AND COOK TIME: About 20 minutes

MAKES: 8 to 10 appetizer servings; 3 or 4 main-dish servings

12 ounces extra-firm tofu (also called nigari tofu)

½ cup pine nuts

3 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon sugar

2 cups coarsely chopped Italian parsley

1 tablespoon vegetable oil Salt
