Arugula Salad with Nectarines, Tomatoes, and Fresh Mozzarella


Use perfect, in-season tomatoes and nectarines, because they are the stars of the show. Adapted from Kitchen Matters (Da Capo Lifelong Books, 2017) by Pamela Salzman.

5 oz. baby arugula (feel free to use less if you like, so it's more of a topping)

2 tbsp. aged white balsamic vinegar or traditional aged balsamic, plus more to finish

2 tbsp. extra-virgin olive oil, plus more to finish

2 large tomatoes (heirlooms or whatever tastes fantastic), sliced crosswise

Flake sea salt or regular sea salt

2 large firm but ripe nectarines or peaches, cut into wedges
