If you care about the quality of the poultry you eat, then ask questions and buy from a reliable source. Don't for instance be fooled into thinking that `corn-fed' chicken is free-range, unless it clearly states that it is. Although some maize is fed to the birds, the yellow flesh and fat colour may well come from dyes added to the food.

Chicken, good chicken, is the perfect summer meal. No-one wants to spend longer than necessary in the kitchen if, and when, the weather gets hot, so this week's recipes are for simple tasty dishes, which make the best of top quality chicken.

Today's uses fresh herbs for a simple roast. Chicken and certain herbs work together like magic. Tarragon is an especially successful partner, so do try to find some. If you want to grow your own, then make sure you get a French tarragon plant because there is a Russian variety which is not nearly as flavoursome.

Roast Chicken with Garlic and Herbs

1 chicken weighing about 1.8

kg/3 1/2 lb

4 heads of garlic

2 sticks of celery

4 sprigs thyme

4 sprigs tarragon

2 sprigs rosemary

150ml/5 fl oz chicken stock (you

can use a cube)

4 tbsp olive oil
