Turkey and Mushroom Pie

Serves: 4

Preparation: 25 minutes + chilling

Cooking: 30 minutes

500g Saxby's Puff Pastry

25g (1oz) butter

2 tablespoons olive oil

2 shallots, chopped

1 large leek, sliced

2 garlic cloves, chopped

450g (1lb) turkey breast, cut into chunks

300g (10 1/2 oz) mixed mushrooms, ie chestnut, chanterelles, horse mushrooms or shtick

4 tablespoons medium white wine or sherry

1 tablespoon chopped fresh thyme

1 tablespoon chopped fresh parsley

200ml (7 fl oz) creme fraiche

1 teaspoon Dijon mustard

1 egg, beaten

Salt and freshly ground black pepper

1. Melt the butter and half the oil in a large pan. Add the shallots, leek and garlic and cook for 4-5 minutes. Drain and set aside. Add the remaining oil to the pan and saute the turkey pieces until sealed. Add the mushrooms and cook for a few more minutes.
