Chorizo baked with apple, rosemary, red onions and potatoes Preparation: 15 minutes.

Cooking: 40 minutes.

Serves 1-2

1 chorizo sausage, cut into discs

4 medium potatoes, peeled and diced

1 medium red onion, roughly chopped

1 sprig fresh rosemary

4 cloves garlic, whole

1 large Cox apple, peeled, cored and quartered

Extra-virgin olive oil

Maldon salt

THIS is one of my favourite types of dish; there are no specific measurements, just a handful of good ingredients and very little preparation time.

You can literally throw the food together, shut the oven door, put your feet up and, 40 minutes later, dinner is ready.

Good food just doesn't have to be complicated.

Chorizo sausage varies quite substantially in spiciness and there are plenty of different types available to buy in supermarkets. If your tastebuds are ironclad, go for the hotter varieties. I personally don't like it when my mouth becomes a furnace, so I tend to go with the milder types of chorizo, or mix hot and mild, for this recipe On the drink front, a cool glass of cider goes down exceptionally well with this dish. …
