KILL THE CRAVINGS AND LOSE THE WEIGHT

It's discouraging to see a physically fit person who has never been more than 10 pounds over his ideal weight tell you how to lose those extra pounds. That's not the case with the author of Let's Do Lunch (Nelson Books, $18.99), Roger Troy Wilson. The self-made millionaire retired at the age of 41 but at 430 pounds he was miserable. Wilson discovered that he continued to eat because of food cravings. He found that if he cut sugar and flour out of his diet and replaced them with healthful foods, the pounds came off. He lost 230 pounds and has kept the weight off for 15 years. Wilson will sign his book at 11:30 a.m. Saturday at the Books-A-Million in the Orange Park Mall.

DON'T CRY OVER THESE ONIONS

From breakfast to dinner, yellow, red and white onions are simple to use, taste terrific and provide a healthful dose of important nutrients and phytochemicals.

Here are some simple suggestions for adding zest to meals in minutes:

-- Use raw onion in salads, sandwiches, burgers, tacos, homemade salsas and relishes for good flavor and crispness.

-- Marinate onions in balsamic vinegar for salads and dressings or to put in sandwiches.

-- Saute or caramelize onions for a flavorful, quick and easy side dish or topping for chicken, fish and other meats. By using medium to low heat and adding a little olive oil, herbs and seasonings, onions will take on most any flavor desired. Serve alone or with a mix of other vegetables, rice or pasta to make a vegetarian main dish. Caramelize a large batch to use later. Refrigerate or freeze for soups, appetizers, omelets, stir-fries or a tasty pizza topping.

-- Add onions to a roasting bag or favorite slow-cooker stew to give a home-cooked meal an extra savory flavor.
