CHEF Q&A

HOW LONG DOES A CLAM BAKE TAKE?

Q: I want to have a clam bake this year and need to know how long to cook the tub of clams, chicken and corn.

Directions come with the pre-packed clam bake containers sold in stores, but the meal tastes better if you cook everything separately. When everything is cooked together, the clams are overdone and rubbery by the time the chicken is ready. The corn doesn't fare well, either. I suggest grilling or roasting the chicken, boiling the shucked corn in a big kettle for about five minutes, and steaming the netted bags of clams in about 1 1/2 inches of water in another big kettle for about 5 to 10 minutes, or until the clams open. The exact cooking time will depend on the size of the clams and how many bags you pack into the kettle.

FOOD BOOK

A COOK'S RESOURCE

Even the best cooks run across an unfamiliar term, kitchen tool or ingredient. A place to find that information is The Food Encyclopedia by Jacques L. Rolland and Carol Sherman (Robert Rose, $49.95). This is the newest reference book on my desk, and it has already come in handy several times. With more than 8,000 entries, it also includes mini-biographies of many food celebrities.

KITCHEN TIP

DISPOSE OF SMELLY SINK

Here's a fresh tip from the December issue of Cook's Illustrated magazine. A smelly garbage disposal can be remedied by first freezing white vinegar in an ice cube tray. Put a few cubes in the disposal. Then run cold water and turn on the disposal to chew up the ice vinegar.
