Lobster's Easy, and They Show It; Chefs Garden Owners Show How Easy It Is to Prepare and Enjoy

PONTE VEDRA BEACH - Tony and Jennifer Corrente, owners and operators of Chefs Garden, a catering company in Jacksonville, are "turkeyed out." That's why, this Christmas, they suggest having lobster.

At an Art @ 3 group meeting Monday at the Cultural Center at Ponte Vedra Beach, the Correntes showed about 25 members how to cook lobster, remove the shell, and serve it, all in about 20 minutes and all without breaking a sweat.

"Lobster is perceived as a very complicated dish ... but it can come out perfectly," Tony Corrente said, preparing blanched lobster with angel hair pasta and mushroom and sherry sauce.

Jennifer Corrente started the Art of Cooking lesson by handing out samples of a champagne cocktail made with champagne and red passion fruit liquor.

"It's a very simple beverage, and we want you to have fun," she said.

Sandy Beers, who volunteers at the cultural center and organizes Art @ 3, said the group is evolving from discussing topics that are artistic, such as painting and drawing, to subjects in which artistic creativity can come in handy, such as the Art of Holiday cooking class and last month's Art of Holiday table setting class. …
