WEEK 76: BLOOD ORANGE JELLY You need: nine blood oranges, one lemon, leaf gelatine, white sugar.

Time to make: 20 minutes.

Time to set: three or four hours.

PRESUMABLY it was some Health and Safety apparatchik who decided that, to protect sensibilities, blood oranges must now be known as blush oranges. It can only be someone's lack of a classical education that allows the juice called sanguinello to remain on sale. Oddly, some blush oranges do seem to have less of the defining pigment anthocyanin, a substance that reduces the risks of age-related diseases. When you cut them open, it is a bit of a lucky dip how red they will be but using nine oranges will always result in a beautifully sunsettinted delicious jelly.
