Bread dumplings are hearty fare in winter, or can be dressed up with salad in summer.

Europeans love Knoedel. Here's a very easy recipe:

Take a bowl and add around 500g of stale bread, one or two eggs, tablespoon of flour, good dash of milk, chopped parsley, then add some cheese, cooked spinach or ham.

Season with salt and pepper. Let mixture set for 20 minutes, wet your hands and roll into compact balls, then steam or boil in hot salty water for 10-15 minutes.

When cooked, add sprinkle of parmesan and melted butter if desired. Uncooked balls will also freeze well for later use, then frozen balls can go straight into hot water for around 20 minutes.

Compost, compost, compost. Even if you live in a small space, portable compost bins turn organic waste into rich nutrients for the garden.

Even in a unit, you can start a great little herb garden in pots and they'll love a feed of organic compost.
