Mexican Lesson in Taste

A few years ago, my family hosted a Rotary Exchange Student from Mexico for about eight months. Her name was Elly and I still remember a few of the things she did.

One night, we made tacos the Australian way. With hard shells, taco seasoning from a packet and sour cream. She pretty much refused to eat my family's poor attempt at her country's most famous dish.

She came home the next night with grocery bags full of ingredients and announced that she was going to show us how to make tacos the proper way.

No sour cream, no lettuce, no onion, no tomato in the mince and no taco seasoning or sauce.

She did however add a special Mexican chilli sauce that has not been equalled by anything you can get on our side of the world in my opinion. …
