THERE'S a new fine-dining experience in Bellingen.

Fresh from the Hunter Valley, home of the long lunch with good local wine, foodies Amanda Vindis and Robert English have brought their passion for relaxed eating to town.

Ave Bellingen, as they have named their restaurant, fills the courtyard and spacious hall of the old Methodist Church in Church Street.

Big tables, cloth napkins and a delicious menu make it easy to stay a while.

Robert describes his cuisine as 'modern Australian' and loves the fact this incorporates a multitude of flavours and textures.

"There are many influences in what I cook, Thai and

Italian included, but this description means I am not confined to any one style and am free to play with what's available and what's seasonal," he said.

The open plan kitchen fires up from about 5am when he arrives to cook the daily breads, friands and tarts.

Pasta is also handmade and last week the specialty was squid-ink linguini. …
