ALMOST everyone is finding some excuse to celebrate tomorrow -- if not at a street party, then at a republican counterevent.

In that spirit I offer the following: you can either toast the happy couple or drink to the fall of the monarchy. I know which I'll be doing, over a fine cava in Barcelona, a city with a serious republican past: salud!

Sadly, far too many cavas over here are cheap and coarse. The best cheap cava I know is Extra Brut NV, from Codorniu -- citrussy and fresh, significantly better than most at [pounds sterling]9.99. For a step up in quality, Castillo Perelada Cava Brut Reserva NV is crisp and light with nice biscuity depth (Waitrose; Harrods; Iberica, 195 Portland St, W1; [pounds sterling]8.99-[pounds sterling]15).

As for champagne, two non-vintages that shone at last month's big producers' tasting in London were the ever-classy Louis Roederer NV (Majestic, [pounds sterling]28); and Jacquesson No 734 NV, dry, complex, focused (thewinesociety. …
