IN my opinion, winter is not the time to experiment with flavours. It is a time for comfort food with simple and classic flavour combinations and you don't get much more classic than spinach and ricotta.

Winter food often isn't the most appealing on the plate, to look at or to photograph. So for that, please accept my humblest of apologies.

This recipe, however, is too good not to share.

Having never been truly happy with any cannelloni recipe I had tried in the past, in the winter of 2009 I did what any keen home cook does and made my own.

This recipe makes for a rather dry, but not too dry, cannelloni and the use of crA[umlaut]me fraA[R]che instead of the classic bA[c]chamel provides that creaminess, without the excess liquid. It is also fairly important to use fresh ricotta, which is available from the deli section of most supermarkets. Recently, after acquiring some new and shiny kitchen equipment, I began making this dish in a metal roasting pan and I am really happy with the results. …
