THIS time of year is by far my favourite.

I hate the heat, I don't mind the cold, but I absolutely adore early spring when the mornings are still a little crisp, but the days are fresh and sunny.

I'm a little fussy, aren't I?

I think weather is one of those things though that really effects your mood, but more importantly what you cook.

I really don't feel like warming up the whole house even more in the warmer months, so rarely do I bake anything substantial nor do I make any braises on the stove top.

As tasty as a curry or stew is, you really don't want to eat it when it is 40 degrees.

This baked frittata how-ever takes a few minutes in a moderate oven, and can be eaten warm, hot, cold or straight from the fridge.

It is super tasty no matter the temperature.

More importantly, it features my favourite spring vegetable; Asparagus. …
