I know it's getting a little too warm for soup, but I think this is fresh enough for a mid spring lunch or dinner.

Tom Yum really reflects the traditional Thai balance of sweet, sour, salty and spicy which is truly wonderful. When you have that balance just right, it dances on the pallet and works like nothing else.

More importantly, when you get it right, you remember the meal.

Now I have made Tom Yum paste a few times, but it does take a lot of time and tasting so I am giving you full permission to cheat. But only this once, so don't go getting used to it or anything.

There is usually a half finished jar of Tom Yum paste sitting in the fridge at home, because it is one of my sisters go to dishes when she doesn't know what to eat. She is possibly one of the biggest fans of the sweet, salty, sour, spicy balance in the world. …
