BREAKFAST might be the most important meal of the day nutritionally speaking, but for super celebrity chef and Mr Nice Guy, Bill Granger, it is important for an entirely different reason.

C[pounds sterling]It is the time I spend with my family,C[yen] he said.

C[pounds sterling]I always cook breakfast for them and then we all sit down together and slow everything down for about 25 minutes.C[yen]

With his wife and three daughters aged 11, 9 and 7 preparing for a school day, and Bill Granger running a growing global business, you would think breakfast would be almost impossible for this family to do together, but not so.

C[pounds sterling]I get up at 5.30am and walk the dog so I can be home to cook breakfast for my family,C[yen] Bill said.

C[pounds sterling]I like to have balance. We always sit down together, I think it's really important.

C[pounds sterling]That formality around eating is very good. It works for our family.C[yen]

Bill Granger is one of the most recognised and loved Australian chefs.

Self-taught, he opened his first restaurant, Bills, in Sydney when he was just 22.

Now he owns three Sydney restaurants as well as three in Japan and will open his London restaurant in November.

As if that wasn't enough workload for any chef, he also writes for several gourmet magazines, hosts his own television show, has eight successful cook books behind him and is about to launch another, Bill's Everyday Asian.

C[pounds sterling]I'm really proud of this book. It was thrilling to write.

C[pounds sterling]Asian food was the first food that really worked my palate.

C[pounds sterling]The first dish I ever made was chicken corn soup, then I went on to sweet and sour pork.C[yen]

Moving on from those oldies but goodies, Bill's Everyday Asian includes favourites devotees love to eat at Asian restaurants but might be nervous to cook at home.

Bill has given his own authoritative stamp on complex dishes, reworked them to make them quick, easy and healthy. …
