COOKED too much lovely food this Christmas and don't know what to do with the rest of it?

Well, Toowoomba's Southern Hotel's Fire and Ice restaurant chef William Mordarcz has the perfect solution for you.

aThe best thing you can do is make up some sandwiches,a Mr Mordarcz said.

aSalads are really good for sandwiches, especially some coleslaw and turkey.a

But that's not the only thing you can whip up a Mr Mordarcz suggested using the ham bone from a Christmas ham for pea and ham soup.

He also said the leftover turkey could be turned into a turkey pie with some vegetables or the ham into a ham and egg pie. Or, he said, if you wanted to get a little bit more creative, make a parmigiana with some leftover ham.

aBut none of it is hard,a he said.

Mr Mordarcz said not to keep cooked turkey for more than three or four days at the most. …
