Spag bol is one of the most universal dishes out there for which everyone has a recipe and one of the only dishes everyone under the age of 10 will happily dig in to.

I like to flavour mine with red wine and some hard herbs like marjoram and oregano, and maybe a bit of basil at the end.

My dad has always treated bolognese like a bit of a C[pounds sterling]use what is in your cupboardC[yen] dish and over the years has thrown in everything from capsicum to peas to the more classic carrot, celery and zucchini.

I tend to prefer to keep things simple and let the tomato shine through.

I always keep a jar or two of tomato passata on hand, so if the sauce is looking a little anaemic, I will throw in a cup or so of that and let it cook down and as bolognese is such a personal thing, I would recommend that you do the same. …
