THE woman tasked with heading the world's largest peacetime catering operation during the London Olympics says she is confident it will go well.

Jan Matthews must ensure the delivery of more than 14 million meals and the removal of 9,000 tons of waste from the time the first athletes arrive at the end of June to close-down in September.

The head of catering, cleaning and waste for London Olympics organiser Locog was snapped at Smithfield market by Jillian Edelstein for the National Photograph Gallery, which is preparing to unveil a giant exhibition of the people in and behind the Games.

And she said she is "as confident as I can be" that the catering at least will run smoothly. Mrs Matthews, 50, revealed she has undergone her own preparation programme. A trip to the Vancouver Winter Olympics in February 2010 convinced her to get fighting fit.

"I realised there was no way I'd be able to do my job at Games time if I didn't lose weight," she said. …
