FOR a nano second I did think of doing a column this week on fish for Good Friday but it just wasn't pushing my buttons quite the way a delectable chocolate recipe could for Easter Sunday.

Yes, it's one of my favourite weeks of the year, when even those diehards of healthy eating sneak in some chocolate.

Now I'm not talking just any old chocolate.

I'm talking beautiful Spanish, French or German chocolate, preferably valrhona 70% Guanaja Feves. These countries make some of the purest and best chocolate in the world.

Using such a high grade chocolate in your desserts ensures the flavour is rich, smooth and full. Using such a high cocoa content means you don't need the same amount of pure chocolate, as the chocolate has quite a strong flavour and as you don't have the high sugar content it just must be better for you!
