Simple and Filling Fare; with Food Writer Shannon Newley

MY DAD is undoubtedly the king of soup.

His amazing winter soup cures all ailments and can make even the hardest days seem that much better.

But it takes an age to prepare with so many processes.

He makes the stock from scratch, includes every vegetable known to man and it even has to be left in the cold over night a thank goodness for frosts (he lives in Stanthorpe).

He then continues to cook it, adds barley, more vegetables and even rolled oats.

But even when I have had the patience to go to the effort a required after a few interstate winters a it just never turned out as good as his.

So when it comes to making soup I like to keep it simple and just make the trip home for the really good stuff. I am just not into really brothy, watery soups.

I like my soups to be hearty with a range of textures so you feel like you have had a full meal. …
