I REMEMBER the first time I had the dish that inspired me to cook this.

I remember because I was hanging out in Melbourne for a few days, it was 40 degrees and the air-con where I was staying had broken.

To escape, I quickly went to the only place I knew I would be safe from the heat a the pub up the road. Which is where I had a similar dish to this.

I wouldnat say pasta is a dish I order often a unless it sounds particularly special or comes with a sauce I have never had before.

I am not the biggest fan of creamy pastas either. I tend to find the richness overpowers everything else.

But this orecchiette (or ear pasta because of its shape) intrigued me. That version actually had broccoli not peas but I think the peas give a little more freshness, and it didnat have the mint but again, I think this mint just cuts through the creaminess a little. If you are not a fan of mint, you can ditch it for parsley instead a but definitely get some herbs in there to add the extra depth. …
