JAMMY DODGE: The trick to making tasty raspberry jam lies in heating the sugar in the oven until it is really hot, without allowing it to caramelise. Wash the fruit and dry it in advance. Add it to the hot sugar, folding it in with a clean wooden spoon. The fruit will cook and the sugar dissolve. Pour into sterilised jars and, when it's cool, put them in the fridge. It only keeps for a few weeks. PULP FACT: If you've got a glut of tomatoes, harvest all the ripe ones (retaining a few to help the green ones turn red) and cut them in half. Bake them in the oven, slide them out of their skins then put them in a pan over a slow heat and reduce the pulp to make your own tomato puree or passata. Freeze in small quantities or store in the fridge in jars, sealing with a layer of olive oil.
