I DON'T think I could have survived meal times at boarding school and university without condiments. They added a splash of interest or helped to make the food palatable and to mine a dollop of tomato sauce certainly helped the stewed vegies into my tummy.

Ingredients

2 garlic cloves, crushed

1 carrot, diced

1 medium onion, diced finely

extra virgin olive oil

1 celery stick, diced

500g lamb mince

1/2 cup dry white wine

1 cup beef stock

3 tbsp Spoon-fed Lamb Jam, plus extra for layering

5 potatoes, thinly sliced

1 cup crumbled feta cheese

1 cup grated tasty cheese

1 bay leaf
