Restaurants Are Not All about the Food, Says Marco

CELEBRITY chef Marco Pierre White paid a two-day trip to Newcastle this week and revealed the recipe for success at his Steak-Steak house Bar & Grill at Hotel Indigo.

And good food, he said, is only a part of it.

The Leeds-born restauranteur, who famously handed back his coveted Michelin stars to focus on a different style of dining, was here to host a dinner and lunch which saw him create a special menu for local customers, many of them Steakhouse regulars.

"A large proportion of our diners on a weekly basis are regulars and that is very interesting because normally with city centre restaurants you have regulars at lunch but not so much dinner so Newcastle defies gravity," said the 52-year-old who was the youngest ever chef to be awarded three Michelin stars.

For most diners, the company they're in is most important ingredient, he said, so what's key has been creating the right environment. …
