Doughnut Forget to Treat Yourself in Italian Style

YES, the holidays have been and gone and the new year's resolutions have kicked in but that doesn't mean the indulging has to stop.

My treat for this week is another favourite of mine: Italian doughnuts.

These little delights are usually flavoured with lemon rind or limoncello. You can use either.

They taste delicious with a rose syrup and vanilla ice cream (as pictured) or simply rolled in a cinnamon sugar.

Ingredients

Zeppole dough

600g potatoes

600g flour

4 eggs

6 tbsp sugar

2 glasses milk

30g butter

Lemon zest

30g fresh yeast

Cinnamon sugar

1/2 cup caster sugar

3 tsp cinnamon

Method:

1. Peel the potatoes and cut into quarters. Place them in a large pot of water and bring to the boil. Boil until cooked, then drain and mash.

2. Push the potatoes through a sieve so there are no lumps.
