EVER wondered the difference between a good artisan salami and its factory produced counterparts? Probably not, but you might want to know more when you learn that one is full of salt and nitrate and the other is not.

Michael Dlask from Salumi Australia, located at Billinudgel (north of Byron Bay), will have you walk away an expert on smallgoods when he presents a masterclass at Yamba's first Gate to Plate event the Regional Masters Exhibition which includes a food exhibition hall and series of masterclasses.

Michael said he is looking forward to next week's event and said his class will be educational as well as entertaining.

"I'll be talking about the art of fermentation we use to produce our meats and explain the differences between the products we make by hand as opposed to the mass-produced examples you might find in the supermarket."
