THE Hooper Centre is turning Japanese with new restaurant Ichi about to open its doors.

Owner Tim Hsieh previously worked as the head chef at the first sushi train in Toowoomba and will bring his 12 years of experience to Ichi.

He has travelled to Japan and learned to make Japanese cuisine from an experienced chef in Brisbane.

Mr Hsieh said the store would sell ramen noodles, sushi and sashimi.

The Japanese delicacy consists of raw meat or fish sliced into thin pieces.

Ichi, which means one in Japan, will be open for lunch and dinner.

It will also cater for takeaway customers.

Mr Hsieh said the restaurant would be affordable.

"Normally you go into a Japanese restaurant and it's expensive, but our food will be reasonably priced," he said.

Ichi is not currently licensed but Mr Hsieh said in the future it would sell the popular Japanese rice wine sake.

He is hoping to open the restaurant in about three weeks. …
