You Can Leave Your Hat On: Top Ritz Chef Finds Time for Portrait

AS THE executive chef responsible for breakfast, lunch, dinner, afternoon tea and room service at the Ritz, he is very, very busy.

But fortunately for artist Henrietta Graham, John Williams found time to pose for this striking study, which goes on display at the Royal Society of Portrait Painters' show in May.

Ms Graham, who has dedicated the past few years to her book A Portrait Of The Great Chefs Of Britain, said she was delighted to have got Mr Williams to sit for her.

"John is the unsung hero of the culinary world," she said. "He is the son of a Tyneside fisherman and is so hard-working.

"Behind the scenes at the Ritz is a true operation not just in the kitchen but across the board. Unlike other chefs who have lunch service then have a break then dinner, John is constantly on the go. He has breakfast, afternoon teas, lunch, dinner, room service the works.

"He is also one of the last chefs to wear a tall hat at all times. …
