This tart lemon pie is a cool and refreshing summer dessert.

It comes from the Navajo Grill in Fredericksburg, Texas. The

recipe is on Page E-2.


1 1/2 cups graham cracker crumbs

6 tablespoons butter, melted

1/4 cup plus 6 tablespoons sugar (divided use)

1 14-ounce can sweetened condensed milk

1/2 cup fresh lemon juice

4 extra-large eggs, separated

2 teaspoons fresh grated lemon rind

1/4 teaspoon cream of tartar

Heat oven to 325 degrees. In medium mixing bowl, mix graham

cracker crumbs, melted butter and the 1/4 cup sugar. Pat into

9-inch pie plate. Place in oven for 10 to 15 minutes or until

light brown. Remove from oven and cool.

In small, heavy saucepan over medium heat, mix condensed milk,

lemon juice and egg yolks. Cook while stirring frequently until

mixture comes to gentle boil. While stirring constantly, cook for

1 minute longer, until mixture thickens. …
